Haaseford Farms’ three Classic Garlic Varieties are French Nouveau (4.3/5 flavour, 4.3/5 heat), Volcanite (5/5 flavour, 4.8/5 heat), and Spanish Solace (4.8/5 flavour, 4.3/5 heat). All are certified organic and grown in Ironbank, Adelaide Hills.

What are the Classic Garlic Varieties?

Three varieties, one standard.

Haaseford Farms grows three Classic Garlic Varieties: French Nouveau, Volcanite, and Spanish Solace.

Each one is grown with the same seven to eight month cycle, the same organic soil management, and the same hand-planting and hand-harvesting as every other variety on the farm.

What sets them apart from each other is flavour intensity and how they behave in the pan.

Which Classic variety has the strongest flavour?

Volcanite is the variety to reach for when you want garlic to be the centrepiece of the dish.

It carries a flavour intensity of 5 out of 5 and a heat intensity of 4.8 out of 5, making it the boldest garlic Haaseford Farms grows.

Use it in aglio e olio, garlic bread, or anywhere you want the garlic to do the talking.

What are the other Classic varieties like?

Spanish Solace sits close behind Volcanite, with a flavour intensity of 4.8 out of 5 and a heat intensity of 4.3 out of 5.

It is a robust, well-rounded garlic that holds its own in slow-cooked dishes like ragu or braises, where you want real depth without quite the full intensity of Volcanite.

French Nouveau rounds out the range with a flavour intensity of 4.3 out of 5 and a heat intensity of 4.3 out of 5.

It is the most even-tempered of the three, a dependable choice for everyday cooking when a recipe simply calls for “garlic” without asking for anything more specific.
